Every Caviar in the Air itinerary is a love letter to the destination. But South Africa? South Africa required a novel. Because this country gives you so much—so many landscapes, so many emotions, so many flavors—that fitting it into 11 days took years of refinement and five personal trips to get right.
This is the complete breakdown of our signature South Africa Experience. Not the marketing version—the real one. What you'll see, what you'll feel, and why every single day matters.
Days 1–2: Johannesburg — The City That Refuses to Be Ignored
You'll arrive at O.R. Tambo International Airport, and your private transfer will take you to The Saxon Hotel, Villas & Spa. After a transatlantic flight, The Saxon is exactly what you need: quiet, elegant, and equipped with one of the finest spas on the continent.
Day 1 is intentionally unstructured. Rest. Eat. Swim. Get your bearings. Jet lag from a 15-hour flight is real, and I refuse to throw you into an emotional experience before you've had a proper night's sleep.
Day 2 is when the journey truly begins. Morning at the Apartheid Museum—an experience I've written about that I consider non-negotiable. Afternoon in Soweto with a local guide: Vilakazi Street, Hector Pieterson Memorial, and lunch at a community restaurant where the flavors are as powerful as the stories.
Evening: private dinner at The Saxon, where our group will process the day's experiences together over South African wine.
Days 3–5: Greater Kruger Region — Where the Wild Things Are
A morning flight to Hoedspruit brings you to the Greater Kruger region and your home for three nights at a private lodge.
Each day follows the safari rhythm:
- 5:30 AM — Coffee, rusks, and departure for the morning game drive
- 10:00 AM — Return to the lodge for a full brunch
- 11:00 AM–3:00 PM — Rest, spa, pool, or guided bush walk
- 3:30 PM — Tea, snacks, and departure for the afternoon drive
- 7:00 PM — Sundowners in the bush with your sundowner of choice
- 8:00 PM — Return to the lodge for a multi-course dinner
I've written extensively about what nobody tells you about safari—the emotional depth, the extraordinary food, the 4:30 AM wake-ups that become the best part of your day.
The Bush Dinner: One evening, instead of dining at the lodge, you'll be driven to a secret location in the bush. A long table set with linens and lanterns. A multi-course meal under a ceiling of stars with no light pollution for miles. Rangers stationed around the perimeter. It is, without exaggeration, one of the most magical dining experiences on earth.
Days 6–8: Cape Town — The City That Has Everything
A flight from Hoedspruit to Cape Town reveals one of the world's most dramatic landscapes from the air: Table Mountain, Lion's Head, and the Atlantic coastline stretching toward the Cape of Good Hope.
You'll check into The Silo Hotel, where your room overlooks the V&A Waterfront and Table Mountain provides a backdrop that would be cliché if it weren't so genuinely breathtaking.
Day 6: Bo-Kaap walking tour through the colorful streets of Cape Town's historic Malay Quarter. Cooking class featuring Cape Malay cuisine—the fusion of Malaysian, Indonesian, and South African flavors that defines Cape Town's culinary identity. Evening at La Colombe, consistently ranked among Africa's best restaurants.
Day 7: Table Mountain cable car for morning views, followed by a drive along Chapman's Peak to the Cape of Good Hope. Lunch at a seafood restaurant in Kalk Bay. Afternoon at leisure—Zeitz MOCAA (the museum below your hotel) is worth several hours, and the rooftop pool at The Silo is worth the rest.
Day 8: Robben Island. The ferry ride alone is powerful—watching the mainland recede as you approach the island where Mandela spent 18 years. The tour is guided by former political prisoners, and their first-hand accounts are devastating and inspiring in equal measure. Afternoon at leisure. Farewell dinner at The Test Kitchen.
Days 9–10: Cape Winelands — Where Luxury Meets Legacy
A 45-minute drive from Cape Town brings you to the Winelands—Stellenbosch and Franschhoek—and your home at Delaire Graff Estate.
Day 9: Full-day wine tasting across three to four estates, with a focus on Pinotage, Chenin Blanc, and Méthode Cap Classique. We include at least one Black-owned or emerging winemaker in every tasting schedule, because the story of South African wine is evolving, and the new voices are extraordinary. Lunch at one of Franschhoek's acclaimed restaurants.
Day 10: Morning at leisure—spa, pool, or a private tasting at Delaire Graff. Afternoon visit to a community project that we support, where you'll see how luxury tourism can drive meaningful change. Farewell dinner at the estate, where our group will toast to the journey over a selection of our favorite bottles from the week.
Day 11: Departure
Private transfer to Cape Town International Airport. Tears optional but likely.
